Blueberry-Lemon Sorbet
Prep time: 7 minutes Freeze: 60 minutes
Makes 5 servings
3 cups fresh or frozen blueberries, thawed
1/2 cup water
2 tablespoons honey
1 teaspoon lemon zest
2 tablespoons fresh lemon zest
1/8 teaspoon salt
Place all ingredients in a blender or food processor; process until smooth. Place berry
mixture in a freezer-safe container, and freeze until hard, about 1 hour. Let stand about 10
minutes before serving. (Serving size 1/2 cup)
