Easy Tortilla Soup (with chicken or black beans)

1/2 to 1 pound cooked shredded chicken (optional)
1 15-oz can black beans, drained and rinsed (optional)
2 cloves garlic, minced
1 sweet onion, diced
1 4-oz can diced green chiles
1 15-oz can diced tomatoes
1 15-oz can diced green tomatoes with jalapeno peppers
2 cups low sodium vegetable or chicken broth
1 tsp cumin
2 Tbsp chopped fresh cilantro or 1 Tbsp dry cilantro
salt and pepper to taste


Combine all ingredients in a crock pot and simmer on low for 8 hours or on high for 4.  Note: is
using black beans, do not add to the pot until the last 20-30 minutes of cooking.  May also be
simmered on the stove in a large saucepan for 30-40 minutes.  Garnish with tortilla strips, low-fat
cheese or sour cream, guacamole, or salsa.  Serves 4-6.
